The mineral composition of Granite makes it an ideal kitchen work surface. Because it is formed by extreme heat and pressure, the heat from cookware will have no effect upon it. It is hard to scratch; the only thing that will cut it is diamond or another piece of granite. It is immune to many chemicals found in foods or household cleaners. It is among the most bacteria resistant surfaces, and is not affected by citric acid, coffee, tea, alcohol, or even red wine. Granite is a porous stone and should be sealed before use with a silicone based inpregnator to prevent staining.
There are two prime categories of granite - Standard and Exotic. The exotices typically have a flow of material similar to marble, with striking and different coloration and veining running throughout the material. Exotic stones are usually found in small quarries or in small sections or larger quarries. They are more expensive because they are often more difficult to get out of the ground, have a limited supply, and simple because they are so beautiful.
